we can dish it….if you can take it
I discovered the recipe for these ethereally fluffy pancakes when I bought the Cake Bible by ---- in the late 90's. I honestly have never eaten a pancake with a more perfect consistency-crisp on the outside and cake-like on the interior. Although it may seem like there are a lot of steps to this recipe, a stand-up mixer really makes light of the task and it is SO worth the extra effort for a this weekend indulgence. A great organic bacon is the perfect compliment. I also love to take some blueberry jam and mix it in the maple syrup for a little extra touch that compliments the berries in the pancakes. Lyon's Market, made in Garretsville, Ohio has an incredible array of jams and jellies, including their "Wit's End Blueberry Jam" which is incredible and available locally at Heinen's Grocery Stores.
Blueberry Buttermilk Pancakes
Recipe from The Cake Bible
Makes 22 pancakes
1-3/4 cups all purpose flour
4 tsp baking powder
½ tsp salt
4 large eggs, separated yolks and whites
2 cups buttermilk
½ tsp cream of tartar
4 tbsp unsalted butter, melted and cooled
2 cups blueberries, fresh or frozen and unthawed
1. Preheat a griddle or frying pan.
2. In large bowl whisk the flour, baking powder and salt until blended.
3. In small bowl beat the yolks and buttermilk to blend slightly.
4. In mixing bowl beat the egg whites until foamy. Add the cream of tartar and beat until stiff peaks form when beater is raised slowly.
5. Add the yolk mixture to the flour mixture and mix lightly with a fork until the flour is moistened. Stir in the butter. The batter should be lumpy as overmixing will produce tough pancakes. Add the whites and fold in with slotted skimmer or rubber spatula.
6. The griddle or frying pan should be hot enough to sizzle a drop of water. Lightly butter it and pour on the batter in 4” rounds. Quickly drop 6 berries onto each cake. Test to doneness by lifting a corner of each pancake with a spatula. When golder brown, turn over and cook 30 seconds on the other side.
7. Remove the pancakes to warm plates and keep warm in a low oven while cooking the remaining batter.
