Winter White Mac n’ Cheese

(serves 6)
3 tbsp butter
3 tbsp flour
2 cups whole milk (2% may be substitute)
½ tsp cayenne pepper
1 tsp white pepper
1 tsp salt
1/3 cup shredded aged white cheddar
1/3 cup shredded asiago
¼ cup grated parmigianno reggiano
Directions:
Using a deep pan, melt butter and gradually whisk in flour until a thick paste forms. Pour in milk and continue to whisk until mixture thickens. Add peppers and salt and allow sauce to thicken, cooking about 10 minutes at medium heat. Boil water for pasta. Remove sauce from heat and whisk in cheeses one at a time. Add pasta to boiling water and cook al dente. Pour cheese sauce over pasta. Shave truffle on top and serve.
